Poundstone and Granola

Very funny Paula Poundstone clip! She's hilarious.

I found this granola recipe in Real Simple magazine. Making it right now and it smells delicious!

4 cups old fashioned rolled oats
1 cup sliced almonds
1/2 cup shredded coconut
1/4 cup sunflower seeds
1/2 cup maple syrup
2 tablespoons canola oil
1/2 teaspoon kosher salt
1 cup dried fruit (I'm using golden raisins, dried cherries, and papaya)

Heat oven to 350 degrees. Combine all ingredients with exception of dried fruit. Bake, tossing once, until golden and crisp, 25 to 30 minutes. Add dried fruit and cool.

Can store up to 3 weeks. Maybe I'll post a pic later if I am so ambitious.
